Narodil se v Praze, ale své životní i umělecké osudy spojil s Brnem. Po maturitě se opakovaně pokoušel o studium na DAMU, ale kvůli zahraničním aktivitám svého otce vždy bezúspěšně. Nakonec se v roce 1978 přece jenom k divadlu dostal, když byl angažován do tehdejšího Divadla pracujících v Mostě, kde strávil šest sezón. Jeho první rolí byl Tofollo v komedii Carla Goldoniho Poprask na laguně. V Mostě pak hrál mimo jiné Glumova v Ostrovského hře I chytrák se spálí a Chlestakova v Gogolově Revizorovi. Členem uměleckého souboru Činohry NdB se Jan Grygar stal roku 1984 (tehdy ještě souboru Státního divadla v Brně). Krátce po příchodu si zahrál Mattiho v Brechtově hře Pan Puntilla a jeho služebník Matti. Hrál také Rostandova Cyrana nebo doktora Schlizouta v inscenaci Steigerwaldovy Neapolské choroby. V současnosti hraje vodníka Ivana v Lucerně, vypočítavého majitele ubytovny Kostyleva v Gorkého Na dně, otce Lháře Geronta a stěžejní je jeho věta v Havlově Ztížené možnosti soustředění: Půjdu na ryby a bude. Je též dabingovým, rozhlasovým a filmovým hercem (Četnické humoresky, Hříšní lidé města brněnského). Z jeho dramatické prvotiny A tak krásně jsme si žili, kterou vydalo v roce 2024 nakladatelství XYZ Albatros, vznikla i divadelní hra (uvedlo NDBrno v roce 2022). Žije na Kněževísku na Vysočině.
