Karbonická macerace je jen jednou z deseti zpracovatelských metod, kterými disponuje producent Hendra ze stanice Pegasing. Zrna této kávy byla vypěstována ve velké nadmořské výšce těmi nejlepšími farmáři z okolí, po dobu 70-80 hodin fermentovaná bez přísunu vzduchu s využitím oxidu uhličitého, a následně sušena na vyvýšených lůžkách. PRODUCENT Farma a zpracovatelská stanice Hendry a jeho rodiny je ostrůvkem experimentálního zpracování v moři konvenční promyté kávy, která je pro oblast Pegasing typická. Hendrův otec Hamdan se do oblasti přestěhoval v roce 2006, koupil pozemek a začal pěstovat kávu. Brzy se pro ni nadchl i jeho syn Hendra, který začal experimentovat se způsoby zpracování, studovat literaturu a hledat radu u ostatních indonéských farmářů, kteří se odklonili od tradiční promyté metody, které se v zde říká Giling Basah.Rodina investovala velké množství prostředků do farmy, a hlavně do zařízení pro různé typy zpracování: malou mokrou lisovnu se dvěma loupačkami na třešně, gravitační promývací kanály a několik vyvýšených lisů, nebo do velkých polyetylénových tunelů určených k sušení kávy. Založili také “školku” pro odrůdu Abyssinia, která byla první odrůdou sázenou v době, kdy se káva dostala na indonéský trh. ZPRACOVÁNÍHendra zpracovává kávu až deseti různými způsoby a nepřestává experimentovat. O způsobu zpracování rozhoduje počasí, a také poptávka ze strany klientů: většinu své úrody totiž prodává pražírnám přímo v Indonésii, především v Jakartě. Jeho zpracovatelská stanice vyprodukuje až 40 tun kávy ročně, tu nakupuje od 70 farmářů z okolí. Hendra je motivuje k prodeji odměnou za dobrý sběr, příspěvkem na cestu, pokud je farmář z daleka, a také příplatkem za pěstování mikrolotů. Promytá káva z Hendrovy stanice pochází od těch nejlepších pěstitelů, kteří sbírají jen zralé kávové třešně a žijí v nejvyšších nadmořských výškách. Zrna se nejprve uloží do plastových fermentačních nádrží, kde se do vody přidá CO2 (oxid uhličitý), který vytlačí veškerý kyslík. Kávové třešně poté kvasí po dobu 70-80 hodin, a pak se po dobu 20-25 dnů suší na vyvýšených postelích v sušícím tunelu, kde se sleduje teplota a zrna pravidelně otáčí, aby se vysušila rovnoměrně. Poté se ještě ručním přebíráním odstraní všechna nezralá nebo vadná zrna tak, aby odpovídala standardům výběrové kávy. ODRŮDA Tim Tim je indonéský název pro odrůdu známou jako Hybrido de Timor. Je to přirozený kříženec robusty a arabiky objeven na farmě na ostrově Timor v roce 1917. Odrůda se dnes hojně pěstuje po celém světě kvůli své odolnosti vůči chorobám a je využívána jako genetický základ pro projekty, které vyvíjejí odolné křížené odrůdy kávovníku.Gayo 1 je odrůda, kterou v roce 2010 oficiálně představilo indonéské ministerstvo zemědělství jako rezistentní vůči chorobám. Není úplně jasné, jaký má odrůda základ, nicméně její genetika napovídá, že také může být potomkem odrůdy Hybrido de Timor. (gourmetkava.cz)

Představte si vysoké hory v kraji zvaném Bombe, bujný zelený porost a mezi ním původní odrůdy etiopských kávovníků. Farmáři zde opečovávají svá malá políčka a výsledky své práce ručně sbírají a odnáší do zpracovatelské stanice, která jim poskytne férovou cenu a jejich kávové třešně zpracuje progresivním a ekologickým způsobem. Přesně tak se pěstuje tato káva, zpracována poněkud netradiční metodou suché fermentace před následovným přemytím. V šálku i díky tomu můžete najít jasmín, bergamot, černý čaj, medovník a meruňky. PRODUCENT Majitelem zpracovatelské stanice Bombe je Asefa Dukamo. S kávou pracuje již 27 let a aktuálně spolupracuje s 300 farmáři v oblasti kolem města Hemesho. Každý z těchto farmářů vyprodukuje průměrně 4000 kilogramů třešní ročně na celkové rozloze 375 hektarů. Asefova zpracovatelská stanice leží v regionu Sidamo v nadmořské výšce 2200 metrů nad mořem a zpracovává hlavně lokální odrůdu 74158. ZPRACOVÁNÍ Speciální zpracování suchou fermentací je variací na tradiční způsob zpracování kávy v Etiopii, ale využívá mnohem méně vody a tím je výrazně šetrnější k životnímu prostředí. Tento způsob převzal majitel Asefa Dukamo z guatemalské farmy La Esperanza, kde jeho syn Kenean strávil nějaký čas, a byl ohromen tímto způsobem zpracování. Káva se klasicky loupačkou zbaví slupky a dužiny, ale následná fermentace probíhá za sucha, v nádržích s kontrolovanou teplotou a bez přístupu vzduchu. Díky tomuto teplému a suchému prostředí začíná káva fermentovat mnohem rychleji, a to se projeví výrazně sladkou a komplexní chutí. ODRŮDA Etiopie je považována za kolébku kávy a její produkce se rovná bezmála 10% hrubého domácího produktu země. Odhaduje se, že v Etiopii rostou tisíce dosud nepopsaných odrůd, které ze země dělají region s největší kávovou biodiverzitou na světě. S ohledem na historickou tradici, způsob pěstování kávy v Etiopii a politickou situaci, je téměř nemožné najít jednodruhové/jednoodrůdové loty (části sklizně). Přestože se to v posledních letech začíná pomalu měnit, zatím je stále typickým označením odrůdy kávy z Etiopie Ethiopian heirloom varieties neboli etiopské původní odrůdy. Je to případ i této kávy.
