Od roku 1970 působil ve skupině Greenhorns/Zelenáči a společně s Michalem Tučným, Tomášem Linkou, Janem Vyčítalem a dalšími spoluurčoval vývoj domácí "western music". Ceněn je zejména jako autor zásadních českých country textů - Divnej smích, Vůz do Tennessee, Tom Dooley, Dívka s vlasem medovým, Hej Joe, Žlutá kytka. Hoffmann se v roce 1969 podílel na legendárním albu Písně amerického západu. Šlo o vůbec první dlouhohrající (LP) gramofonovou desku v žánru country hudby, zpívanou v českém jazyce a interpretovanou předními českými soubory Zelenáči (Greenhorns), White Stars a Spirituál kvintet. Dodnes je uvedený projekt považován za perlu ve svém žánru a po čtyřiceti letech se dočkal i albového pokračování. Ještě v roce 1970 se Mirek Hoffmann stal členem skupiny Greenhorns, přejmenované později na Zelenáče. S tímto souborem je pak spjata jeho více než čtyřicetiletá hudební kariéra. Prosadil se především jako textař, ale i jako zpěvák a skladatel. Od devadesátých let vydával se skupinou Zelenáči (původně Noví Zelenáči) řadu alb s podtitulem "Příběhy".
